In the Text Overlay section of the editor, type your text and configure the font (Arial, Georgia, Impact, and more), size, color, stroke, shadow style, and alignment. Then click “Click Image to Place Text” and tap anywhere on the preview to stamp your text at that position.

Yes. Use the Reset Edits button to revert all adjustments back to the freshly merged image. If you want to change the images themselves, use Back to Merge to return to the upload step without losing your file queue.
